Indian has the way to ¨cook¨ tea is very special. Calling is ¨cook¨ to let you know that to have a cup of Indian tea is not easy and quick. If green tea, black tea, Jasmine tea, Lotus tea,...you might put it in pot, pour hot water and wait some minutes for getting a cup of tea well done. Or even Japanese tea, it is famous because of its processing and ceremonial first. However Indian tea is totally a different story. The poor one cook and drink tea on pavement, on streets. The rich on drink tea at villas, on luxury party. However, all is same flavor that is difficult to mix with others.

The bitter tea leaves were boiled within several minutes, the cooker will pour milk, and then ginger, cinnamon by their cooking experience. Depend on the sweet rate, sugar might be added to increase flavor. The Indian tea is boiled looks like a soup pot. Tea is done will change into light sand color. The Vietnamese people drink tea, specially ice tea by a big cup like drinking fresh beer or water. The Indian people drink tea by a small cup, tea always keep hot. When you drink you will feel ginger smell firstly, it also will make you feel comfortable and relax and light sweet touch your tongue wake up all your tastes next. Hence the hot tea so you only drink it in mouthfuls will let you have time to enjoy it, understand it as well as Indian culture. Even when I bought Indian tea and cook it as the guideline but I can not get the taste exactly as in India. Maybe good tea is by cook´s hand.
